COOC Certified Mission/Manzanillo Extra Virgin Olive Oil is made from a blend of mission and manzanilla olives from the California orchards. It is a COOC (California Olive Oil Council) oil and CCOF (California Certified Organic Farmers) certified. The olives are picked medium-ripe by hand and brought immediately to the certified organic mill right next to the orchard on the farm so that they could be milled without any delays. The production processes are the most careful. The oil is then stored in stainless steel fusti in a cool room so that it could be optimally preserved and bottled to prevent the oil from being damaged by light. This oil is mild with a little bitterness or pungency. It contrasts sharply with our other, stronger, extra virgin olive oils. This light body and gentle flavor makes a perfect partner with our lemon white balsamic vinegar; it does not overpower the lemon, resulting in a well balanced marinade or dressing.
